Cookies & Cream Brioche Roll

A sweet and indulgent lunchtime pick-me-up

Serves 8


  • 8 St Pierre Chocolate Chip Brioche Rolls
  • 1 packet Oreo cookies
  • 500g mascarpone cheese
  • Vanilla extract
  • 1-2 tbsp icing sugar


  1. Crush the Oreos into small pieces, either in a plastic food bag and using a rolling pin or in a food processor
  2. Mix the crushed Oreos with the mascarpone cheese, saving some pieces of cookie for decoration
  3. Add a few drops of vanilla extract and some icing sugar to taste
  4. Slice the brioche rolls lengthways along the top being careful not to cut through fully
  5. Fill the brioche roll with the cookie and cream mix, and decorate with cookie pieces
